Discovering Babka: A Beloved Pastry's Journey to France

Babka originated in Eastern European Jewish communities during the early 19th century. The name derives from "babcia" or "baba," meaning grandmother in Slavic languages, reflecting its homemade roots.  Traditional babka featured cinnamon or seeds twisted into a distinctive swirled loaf prepared for Shabbat and celebrations.

Mid-20th century migration brought babka to America and Western Europe, where New York bakers introduced the now-iconic chocolate filling. This richer adaptation quickly overshadowed the original version in popularity.

The French interpretation represents babka's continued evolution, applying precise patisserie techniques to this rustic classic. French chocolate babka maintains the signature twisted structure while elevating the experience with premium ingredients and meticulous craftsmanship.

This history of adaptation makes babka the perfect canvas for innovation, including plant based versions that honor tradition while embracing contemporary preferences. Today's hazelnut topped chocolate babka represents the culmination of this journey: a testament to how centuries old recipes can be respectfully transformed while preserving their essential character.

French Heritage Meets Modern Innovation

As with all Délifrance products this delightful chocolate babka features only the finest ingredients. Decadent chocolate makes up 17% of the babka for your pleasure. As a plant based product, we have sourced RA MB chocolate and RSPO SG palm-oil margarine.

One of the crucial elements of a babka is the tradition left by those grandmothers of Eastern Europe. The tradition of knotting and hand twisting each roll individually. It is something we took to the heart of our chocolate babka, and have made sure it is part of our modern plant based pastry. This means that each babka you enjoy from Délifrance is truly handcrafted for that artisanal look.

Speaking of looks, this generous Chocolate babka is as tasty to eat as it is beautiful to look at. It has a gorgeous golden-brown exterior, flecked with a crunchy chopped hazelnut topping.  Remember the 17% chocolate we spoke about? You will see the swirl before you taste it, thanks to the hand twisted style. There are also chocolate drops to complement on top and throughout the babka.

Seeing is believing, and we are confident that the chocolate babka will become a hit no matter where you place it! Just make sure you have enough, they will go quickly!

Plant Based Excellence: Breaking New Ground

Ask any vegetarian, and they will be sure to tell you they wish there was a plant based pastry that didn’t taste like cardboard! As the benefits of the vegetarian diet have become better understood, so too have the products able to be prepared to cater to that.

The key differences in this product to make are;

  • The use of RSPO SG margarine instead of butter
  • No eggs to make the dough
  • In fact all such animal sourced ingredients have been replaced!

So, we have established our babka is a beautiful looking, hand twisted, plant based pastry. Most importantly, does it also taste like cardboard?  Well, experts as we are in traditional baking, we also needed expertise to make a perfect vegetarian pastry.

That expertise came from an exclusive collaboration with renowned French baker, Rodolphe Landemaine who has been involved in vegan baking since 2007.  Rodolphe’s experience at the leading edge of this movement has been centred on making products that taste better than the originals. By putting his name to these chocolate babka’s (and our whole Délifrance Impact range), you can be assured the taste is as good as the look.

You may be wondering how we can produce the hand twisting and knotting required for a traditional babka at scale to bring it to you in Singapore. Another innovation was required for this extraordinary product, the creation of a brand new line allowing for hand crafting and unique recipes.

We are so proud of the results, and look forward to you getting your hands on one.

The Impact Range: Taste Meets Responsibility

Délifrance have long been committed to promote our vision of helping everyone change their consumption habits. This was formalised as part of our Baking Good Better program. To avoid claims of green-washing, we publish an annual CSR report, highlighting adherence to our key pillars of Planet, People and Product.

Often, pillars from the Baking Good Better program overlap, as they have with the chocolate babka. By looking for the best product, we needed the best ingredients. That led to us selecting RA MB products for. RA MB certification means farmers can benefit from the social and economic advantages of certification with less onerous administration requirements.

The same careful sourcing that ensures environmental responsibility directly enhances flavour. Without hormones, antibiotics, or artificial ingredients, the pure chocolate taste shines through—creating an experience customers immediately recognise as premium.

At Délifrance, we believe this ever-changing world is full of opportunities, but that as a company we have a responsibility to future generations. That is why we choose to reinvent the way we bake, developing the Délifrance Impact range with the objective to respond to environmental challenges and planet resource limit problems.
