No-Waste Baking: A Sustainable Easter Treat

This carrot cake recipe becomes zero waste by using leftover Délifrance Heritage Croissants (perfect for this recipe, you could substitute other croissants but the flavour profile won’t be the same).  It is an innovative and responsible way to stretch the value of your croissants, as well as reduce the strain on Earth.

Ingredients for a no-waste carrot cake, including croissants, fresh carrots, eggs, cream cheese, cinnamon sticks, brown sugar, and oil on a marble countertop.

Ingredients You'll Need

This is for a recipe of 6 portions

Cake:

  • 200g stale Délifrance Heritage Croissants
  • 100g brown sugar
  • 150g cooked sliced carrots
  • 70 ml oil
  • 3g pure vanilla or ¾ teaspoon of vanilla extract
  • 7g (1 and ½ teaspoons) cinnamon
  • 3 medium sized eggs (~140g)
  • 70g white sugar
  • 5g baking powder
  • Optional spices for your own spice mix such as star anise, ginger, cloves, nutmeg, allspice

Icing and Decorations: 

  • 75g Philadelphia cream cheese
  • 50g icing sugar
  • Chocolate Easter bunnies
  • Other chocolate treats

Step-by-Step Preparation

Cake (35 minutes):

1.  Cut the stale croissants into pieces and put them in a mixer, with brown sugar and cinnamon. Mix until you obtain a sandy mixture.

2.  Add the cooked carrots, then the oil and set aside.

3.  In another mixer, combine the eggs and sugar, then heat the mixture over a bain-marie to about 60°C, then whip as for a sponge cake.

4.  Add this preparation to the croissant, oil and brown sugar mixture.

5.  Pour the completed mixture into a bake tin about 20 cm in diameter, and bake for 30 minutes at 170°C.

6.  Remove from the oven and leave to cool on a wire rack.

Icing (5 minutes):

1.  To make the icing, start by combining the cream cheese with the icing sugar.

2.  Then whisk until the mixture is white and consistent.

3.  Once it’s ready, spread it immediately over the carrot cake.

4.  Decorate with chocolate Easter bunnies and other treats as you prefer.

If you are baking this at home with the kids, decorating can be the most fun part!  If you have 2 or more kids, give them a half (or third, or quarter, or more) each and make a little reward for who decorates their part of the cake best!

Chef's Tip: Signature Spice Blend

Remember earlier we suggested you could make your own unique spiced flavour for this zero waste carrot cake?  Check out the mix below from our Délifrance team to do exactly that.

Add ¾ teaspoon of ground nutmeg, ½ teaspoon of ground ginger, ¼ teaspoon of clove (go easy as the flavour is outsized for the amount you think is going in), and then either ¼ teaspoon of allspice or star anise.

If you aren’t sure what will work, we recommend making the carrot cake the first time without the mix, and then adding your preferred combination of spices the second time around.

Of course, you can mix and match, or add flavours such as cardamom for example to make it your own.

Serving and Presentation Ideas

With your decorated zero waste carrot cake bunny proudly on the bench, it is time to enjoy!  You should end up with 6 generous slices, just right to be gone in one sitting for a family.
